Canadian Rocky Mountain Ranch game meat is ideally suited to today’s light cuisine including broiling, grilling, stir-fries, etc.
There is little fat in Ranch game meat, therefore only minimum shrinkage occurs during cooking. Always preheat the oven or grill prior to cooking. Remove visible external fat from meat before cooking. Always cook over high heat to seal in the juices. Care taken not to over cook game meat will prevent it from drying out and keep it tender and flavourful. Resting game elk in a warm place for a few minutes after cooking allows its natural juices to disperse evenly, enhancing its succulence. Serve medium rare (pink) for maximum taste and tenderness. Always cut game meat across the grain to serve.
