Old School is the New School: A Collab

Merging old and new school techniques in an innovative way with signature ingredients from each chef, Chef Darren MacLean and Chef Alistair Barnes have collaborated on the menu to bring an elevated play on both their signature cuisines to each dish.

The 5 course menu plus 2 amuse bouche with pairings will be served in the Wapiti Longhouse at Buffalo Mountain Lodge in Banff on April 5, 2019.

Chef Darren MacLean: Celebrated Canadian chef and successful restauranteur, chef MacLean appeared as the only Canadian competitor in the global cooking Netflix show, The Final Table. He beat out 20 of the world’s best chefs to cook for nine of the world’s greatest chef judges in the in the finale of the show. As chef/owner of the Japanese style brasserie Shokunin in Calgary, AB, they have been listed as one of the top restaurants in the country; placing in the top 50 restaurants list for 3 consecutive years. Known for pushing boundaries in the Canadian food cuisine his attention to detail and superior craftsmanship has earned him recognition as one of the best chefs in the country. You may look forward to seeing more of him at his new restaurants that are opening this fall, Nupo and BarShoku.

Chef Alistair Barnes: A leader in distinguishing CRMR’s signature Rocky Mountain Cuisine since 1985. Chef Barnes has participated in several high-profile culinary events, including heading a team for a ‘Chefs of America’ dinner in Baltimore, and presenting Rocky Mountain Cuisine at various Canadian Tourism Commission Events in Washington, D.C., Texas and New York. Most notably, he has been a featured chef at the James Beard House in New York, where he presented his highly acclaimed interpretation of Western Canadian cuisine.
